This year we aged our Scotch Ale in freshly emptied, first, ex-fill oak barrels used to mature French red wine, followed by further maturation in stainless steel. The oak and wine influence cuts through and brightens the impressive malt body and sweetness, adding fruit-forward flavours of juicy red berries, blackberry and cherry. Over 13 months this has melded seamlessly with flavours of stewed plum, dried raisins and brown sugar derived from the base beer. It pours mahogany with ruby highlights and medium yet very fine carbonation.
